Preparation:
Place tail on cutting board and insert tip of knife as shown. Place palm of hand on knife back and crack the lobster just far enough to break the shell.

Hold lobster upside down in palm of hand. Run two fingers between the shell and meat to loosen.

Pull the meat out of the shell, leaving it connected at the base of the tail. Close the shell under the meat.

Baking:
Pre heat oven to 450 degrees. Place tail on a rack inside of a cookie sheet. Fan out the tail. Add small amount of water to pan. Cook for 10 minutes. Then add seasoning and brush with butter. Cook for 5 additional minutes.
